I have searched far and wide to find a good Chinese cookbook and finally found it! This is a great book for those who want recipes for authentic regional favorites throughout China. It an excellent, well writen book with easy to follow recipes and in many cases the history behind the dish is also given. The recipes ask for authentic ingredients, so you need to have access to a good Chinese food store to find everything, but the results are well worth it. The book also includes great articles on the various types of meats, vegetables and noodles used in a wide variety of Chinese cooking. I love the sections on dim sum and special occassion dishes. I have cooked over half of the recipes in this book and all have been delicious. This is one of my favorite cookbooks. I give it a 5 star rating!
