"I made some of these cupcakes for vegan friends who were seriously pastry-deprived, and they were almost as amazed as I was--what a great book of recipes! I couldn't tell that these cupcakes were missing butter or eggs. I cut the recipes down to make smaller batches, and the cupcakes still came out beautifully. All the recipes look amazing, and most recipes don't require any ingredients that are hard to find--most just need soy milk and apple cider vinegar. All the recipes sound appealing. The book includes a few gluten-free and agave nectar recipes for people with special diets. I borrowed this from the library, but I plan to buy a copy to add to my shelf."
"A really fun little book - so far, I have made two kinds of cupcakes, and three kinds of frosting from the book. Both cupcake recipes were delicious, and two of the three frostings were *great*.
I realize that vegan baking is a exercise in creativity and there is a true art to substitution... but I couldn't help but think that there may have been some other subs for all of the soy products and the sugars in the book. I used almond and hazelnut milk in place of the soy and had very good results. I also cut the sugar amounts in half on the frostings and they were still very sweet and perfect for the recipe.
All in all, it is a great book and one that I will turn to for years to come for quick delicious recipes for myself and for all my friends - vegan or not!"
"I'm not vegan (just vegetarian), but these cupcakes are fabulous. I heard about the book a couple of years ago and I kept meaning to get my hands on it, but I don't normally keep vegan ingredients around my house. Later, another law student baked some cupcakes for a bake sale, and I fell in love with the frosting (I believe it was the basic Vegan Fluffy Buttercream). The book includes a lot of tips on baking and decorating, and features both basic and more exciting vegan cupcake recipes. The ingredients are also "normal" enough to make it fairly easy to bake vegan if you don't normally. It doesn't have to be a production; just buy some soy milk and some Earth Balance and you're golden for many of the recipes. I also love the photographs and the cheerful tone of the book, and its size is perfect for the kitchen."
"This is without a doubt the best cookbook I own (and that's saying a lot). I bought this book when I was assigned the task of baking for my lactose-intolerant friend's birthday. I wanted to make her red velvet cake, her favorite, and needed to find a lactose-free version. I have to admit that even I, a formerly pretty die-hard vegetarian and very open-minded kind of girl, was pretty skeptical about how good vegan cupcakes would be. I expected dry, flavorless, nasty little things. Oh, how wrong I was.
These cupcakes are the best cupcakes that anyone I know has ever tasted, and these are people that are decidedly not vegan. In fact, most of them wouldn't even touch the cupcakes if they'd known they were vegan. So I whip up a batch, pawn them off on unsuspecting people who comment on their absolute awesomeness, and then scream "AND THEY'RE VEGAN!!!" Most of them don't believe me."
