"The is THE book about eating. This "slow down diet" isn't so much about WHAT is eaten as it is about HOW it is eaten. The author has done his research thoroughly and presents compelling case studies and more to show the importance of slowing down and enjoying the meal. The only chapter that didn't work for me was the chapter on story. I could sort of see what he was trying to say, but I think he needed to take another whack at it, give it another try. On the whole, though, this was a lifestyle changing book. It added to the quality of my life and the depth of my understanding in a way that has been marvelous.

Basically the premise is that the *way* we eat is as important as *what* we eat and metabolism is made up of more factors than just digestion -- and food is a holistic thing, not just a bunch of chemicals lumped together.
