"Nancy Silverton was first brought to my attention in an essay covering the compulsive nature of baking sourdough bread, and led right to this book which is essentially a comprehensive guide on the road to that obsession.
And that's why I haven't started...baking. I finished Silverton's book, and it's fantastic and frightening to any baker. It doesn't help that the thing itself is think as a phone book, printed on heavy beige paper (that looks a lot like parchment paper straight out of the oven), and features moody, black and white photos that'd be a better fit in a celebrity coffee table book.
And then there's Silverton, who is comprehensive in her descriptions and recipes. She takes thirty pages just for the prep work and materials and then another ten to walk through the starter. Finally, she gets to the first bread and takes twenty pages to cover the recipe. I'm thankful. Any less information, and I wouldn't be able to tackle a project like this.
But I'm not ready for the sourdough commitment: keeping the starter alive everyday, maintaining a daily baking schedule. So it'll have to wait, but I'm glad this book will be there to guide me."
"Such an inspiring book. I love how Nancy sees this table staple as art and the creation of bread as almost reverent. If you are looking for a bread book that creates a loaf in an hour or less, this is not the book for you. True earthy, artisan baking. Beautiful."
"I think I might read this more for pleasure than I do to cook with it. This is my favorite book about sourdough -- the science, the method, and the art. Silverton's writing is both accessible and interesting. She takes you through how to make your own starter from flour, water, and grapes; how to maintain it; and how to use it in exciting and unexpected ways. Having a starter is like having a pet, though, so I've only done it once, but it was really fun!"
