"i read cookbooks like i read novels...in bed with my quilt tucked around me. i like this book because there's a lot of discussion about the process of creating THE PERFECT recipe. Having said that, I don't think the recipes here are necessarily the best. In fact I hardly ever use them, preferring my own tried and true recipes. However hearing someone else obsess over minutae (10% protein or 12% protein flour, advantage of dutch to natural cocoa, will holding a tray of unbaked cookies at room temperature significantly affect the end product) is gratifying. I'm not the only food nerd out there."
"This is not the thing to read if you are trying to eat healthy. Just to give you an example, I made the "Fudgy Brownies" which contain, among other things, a 1/2 dozen eggs & 3 sticks of butter (no joke); they turned out so good that I ate 1/2 of the 9x13 pan, my face broke out, and I decided that hands down I would do it again! Mom & I have also found the absolute best chocolate chip cookie recipe in here. Read it if you dare <:|"
