"Kosher by Design Lightens Up by Susie Fishbein is the sixth in this series of cook books and it's the first I've had the pleasure of reading. The previous five are Kosher by Design, Passover by Design, Kosher by Design Entertains, Kosher by Design Short on Time and Kosher by Design Kids in the Kitchen.
The book has over 145 recipes, each one with a gorgeous full color photograph of the completed recipe. While all of the recipes are kosher they aren't all Jewish. There is a delicious miso soup recipe that I've tried. It was easy to make and very tasty.
The book starts with a three part introduction that teaches the basics of keeping kosher, some simple tips for lightening up day to day cooking and how to entertain guests in a stylish but fun way. After that the cook book really begins with recipes divided into appetizers, soups, salads, poultry, meat, fish, eggs and pasta and dairy, side dishes and finally deserts. My favorite parts are the soup and salad chapters although the soup chapter is heavily reliant on gadgetry.
Not all of the recipes are things I will want to try or be able to try. Some of them rely on a roomy enough kitchen to house lots of different cooking utensils and tools that I just don't have.
Although I'm not Jewish I do have relatives who are and it's nice to have this resource on hand. I know it will come in handy on a regular basis."

Last Shabbos I prepared nearly all the dishes with recipes from this cookbook, and got rave review. The recipes really are lighter and healthier, but still really, really delicious. It helped that I had a vegetarian at my table, and I really wanted to prepare a lot of vegetable and grain dishes. So far, we really love the Zucchini Lentil Soup, Curry Chicken and Teriyaki Butternut Squash Rounds."

You will find a dish for every occasion here. There are sixteen lovely appetizers that would be a great addition to any holiday party. "When Kosher By Design Lightens Up by Susie Fishbein was delivered, I don't know who was more excited - me or Carl. We both enjoyed looking through it. The first few pages of the book explain how to keep a kosher kitchen and make healthy choices in your eating habits. There is a section with definitions and explanations of flours, sugars, oils, etc. The section on entertaining has some great ideas.
The reason you buy a cookbook is for the recipes, though, and this one has some great ones. I cooked the Cabbage Soup this weekend and the recipe is simple and easy to follow. The soup was delicious! There's a picture with every recipe, and the recipes use ingredients that are easy to find. The directions are clear and concise. The recipes in this book are for food that your family will eat - things like Italian Pot Roast, Enchiladas, Salmon Burgers, and Blueberry Pancakes just to name a few. There is an emphasis on making the dishes healthier. There are a lot of recipes that I want to try like the Greek Frittata Ring, Multigrain Pasta with Roasted Red Pepper Pesto and Frozen Pumpkin Pie.
