As expected, the folks at American Test Kitchen have done it yet again. The ingredient prep directions alone set it apart from all the others, and as in all their other books the hints and ingredient recommendations are appreciated.

I wouldn't use dry beans again, though. In the cassoulet I made the dry beans never became soft even after 12 hours.
