This is the best cookbook I've ever opened on my countertop. ATC not only gives us recipes that actually work and taste great; they give the rationale, the testing/tasting that leads to the final published recipe. Also included are evaluations on what equipment/ingredients will do the job the best job and why. I've simply had a great time preparing/serving the meals prepared from this cookbook. ATC is also online; all in all, a superb kitchen resource.
