EXCELLENT. Excellent. Excellent. I have been using these guys' books for years. I own every cookbook that they've written They always provided clear recipes that are delicious and inventive. This MEAT book is a very helpful for demystifying the confusion that is associated with buying and preparing meat. It provides a comprehensive and detailed break down of various cuts and the best ways to cook them. It will allow adventurous readers to work with cuts that they may never have used before and, at the same time, it will teach readers how to prepare and cook old standards in more succulent and delicious ways. A new Schlesnger Willoughby cookbook is always cause for celebration. Throw a party for it!
