This book is a" must have" for all new cooks who wish to master the techniques of Spanish cooking. I learned to cook w/this book (my copy is in shreds after 50 years) and I buy it for all new cooks so they can learn from the master. Mrs Aboy, was our Julia Childs and there's no better reference book on the market. Her second book, Together in the Kitchen is a perfect complement as a follow up, where she and her husband present simpler recipes with lots of short cuts. Everything in this book turns out to perfection!

learn the basics
This is a great book for the introduction to Puerto Rican cooking. My mother had this book and bought me my own copy after i got married. It does help with general recipes but regional flavor is lacking. I do recommend this to anybosy interested in Puerto Rican cooking as this is a good book to jump start the taste buds.
